If you are a pancake person then this recipe is something you HAVE to give a try. There’s something special about adding yoghurt to your pancakes. it makes them so much fluffier and better in texture along with giving it a salty tinge of taste.
I’ve tried lemon chia pancakes before but I honestly prefer fresh oranges over them. Adding in the zest is a whole game changer.
Ingredients and easy swaps :
-Chia seeds : Chia seeds are very good sources of omega 3 fatty acids that are necessary for good brain health. They’re also very calorie dense
-Yoghurt : adding yoghurt to the pancakes makes them airy, fluffy and salty. You can replace yoghurt with any milk of choice.
–Orange juice and zest: This is the key ingredient and wouldn’t recommend replacing it but just incase you aren’t able to find oranges, replace it with lemon
– Baking powder : This adds to the texture of the pancakes and makes them softer. Wouldn’t recommend skipping it but if you don’t have it, you can still make the pancakes without it
-Banana : For adding natural sweetness to the pancakes.
–Honey : To make this vegan you can use agave or maple syrup.
Orange Chia Pancakes
Ingredients
- 1/2 Cup -Instant oats
- 4 tbsp -yoghurt
- 1 tbsp -Orange juice
- 1 egg -Egg
- 1/2 banana -Banana
- 1/2 tsp -Orange zest
- 1/4 tsp -Vanilla essence
- 1 tsp -Baking powder
- 1 tbsp -Chia seeds
- 1/2 tsp -Butter
- 1 tsp -Honey
- For garnish: 1 tbsp yoghut+ zest+ orange slice
Instructions
- - In a blender add in all the ingredients mentioned and blend it roughly.
- -In a pan, add in the butter and cook the pancakes for 3-4 minutes on each side (or until bubbles start to appear)
- -Flip the pancakes and let it cook for another 1-2 mins
- -Stack the pancakes and top with yoghurt and zest
- -Drizzle a little honey or maple syrup for sweetness
