If you aren’t a big fan of spinach then the best way to add spinach to your meals is to camouflage it as much as possible. I absolutely love the combination of spinach and corn, it goes really well in a sandwich and when combined with mint chutney, this adds all the flavour needed.

- Multigrain bread : To make this a very healthy recipe, try using a well sourced multi grain bread. If that’s not available then any bread should do

- Sweetcorn : Boil the sweetcorn in a little bit of salt water and set aside

- Spinach: You can put in as much spinach as needed

- Green chutney: A classic Indian chutney made with coriander, mint leaves, green chillis and garlic

- Seasonings : Salt, pepper, chilli flakes (and any other seasonings needed)

- Cheese slice : I used the milky mist cheese slice

- Butter : you can use olive oil instead as well
Spinach Corn Sandwich
Quick and easy spinach sandwich with a twist of mint chutney

Ingredients
- 2 slices Multigrain bread
- 2 tbsp onion finely chopped
- 1 cup spinach finely chopped
- 1/4 cup boiled sweetcorn
- 2 tsp green chutney
- 3/4 tsp butter
- 1 slice cheese
- 1/4 tsp chilli flakes (to taste)
- a pinch salt (to taste)
- a pinch black pepper (to taste)
Instructions
- In a pan, heat a little bit of butter and add finely Chopped onions, sautee for 3 mins
- Add the spinach and cook until wilted and then add the sweetcorn
- Add chilli flakes, mixed herbs, salt and pepper
- Take a slice of bread, spread green chutney on it and then add the spinach corn mix.
- Add 1 slice of cheese and close the sandwich
- Grill the sandwich in butter until crispy
- Slice it into two and dig in!
